A street food favorite in the night markets of Thailand, this Thai green mango salad recipe, known as som tum mamuang, is a refreshing adaptation of a more widely known version made with papaya. Usually served as an appetizer, this spicy-sweet salad makes splendid use of crunchy and tart unripe mangoes.

A fruit shredder can make quick work of slicing the mangoes. A mortar and pestle is also key for extracting flavor and fragrance from the aromatics and fruit (and is a worthwhile investment for all kinds of cooking). When making this dish, cooks in Thailand traditionally use a larger mortar than what is typically found in the U.S.

This recipe originally ran in our June/July 2010 print issue with the story “Everything Is Illuminated,” by James Oseland.

Time: 25 minutes
  • 2 Tbsp. small dried shrimp
  • 8 red bird’s eye chiles, stemmed, seeded, and thinly sliced
  • 4 garlic cloves, finely chopped
  • ½ medium shallot, finely chopped
  • 3 small, green unripe mangoes (about 1½ lbs.), peeled and cut into thin matchsticks
  • 18 green beans, trimmed and cut into 2-in. lengths
  • 14 grape tomatoes, halved
  • 3 Tbsp. fish sauce
  • 2 Tbsp. lime juice
  • 1 Tbsp. plus 1 tsp. palm sugar or brown sugar
  • 2 Tbsp. roasted unsalted peanuts, coarsely chopped

Instructions

  1. In a large mortar and pestle, pound the shrimp until coarsely ground; transfer to a small bowl and set aside. To the mortar, add the chiles, garlic, and shallot and pound until bruised. Working in batches, add the mangoes and pound, using a spoon to scrape the sides and combine well after each batch, until the fruit is softened slightly and fully coated in the aromatics. Transfer the mixture to a large bowl and set aside.
  2. To the mortar, add the green beans and tomatoes and lightly pound to extract their juices. Stir in the fish sauce, lime juice, and sugar, then transfer to the bowl with the mango mixture and toss well. Transfer to a serving bowl or platter, garnish with the crushed dried shrimp and peanuts, and serve at room temperature.

Our classic California sandwich recipe combines a trio of fresh Golden State produce, Monterey Jack cheese, and a creamy ranch-like dressing. A version of this late-century favorite can still be found on deli-counter and sandwich-shop menus throughout California—but the feel-good meal is just as easy to layer up at home.

Time: 10 minutes
  • ¼ cup buttermilk
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 Tbsp. finely chopped chives
  • 1 Tbsp. finely chopped parsley
  • ½ tsp. garlic powder
  • ¼ tsp. onion powder
  • Kosher salt and freshly ground black pepper
  • 4 slices multigrain bread
  • 2 slices Monterey Jack cheese
  • ½ cup alfalfa sprouts
  • 1 avocado, peeled, pitted, and thinly sliced
  • 1 ripe tomato, cored and thinly sliced

Instructions

  1. In a small bowl, whisk together the buttermilk, mayonnaise, sour cream, chives, parsley, garlic powder, and onion powder. Season to taste with salt and black pepper, then spread the mixture on one side of each of the bread slices. Place a slice of cheese on two of the bread slices, then divide the sprouts, avocado, and tomato atop the cheese. Season the vegetables lightly with salt and black pepper, top with the remaining bread slices, and serve the sandwiches cold or at room temperature.

This traditional aïoli recipe comes to us from the inn Relais Notre-Dame in Alpes de Haute Provence. The garlicky sauce perfectly illustrates Provence’s culinary touchstones: simple preparations and local ingredients. Throughout Southern France, the silky, mayo-like condiment is served alongside meats, seafood, and raw or roasted vegetables as the centerpiece of a “grand aïoli.”We find it just as delicious paired with crispy frites

Yield: about 2 cups
Time: 13 minutes
  • 6 cloves garlic, peeled
  • Coarse salt
  • 2 large egg yolks
  • 2 cups extra-virgin olive oil
  • 1 Tbsp. fresh lemon juice

Instructions

  1. To the bowl of a mortar, add the garlic and a generous pinch of salt. Use the pestle to pound the mixture into a smooth paste. Working with the pestle or a whisk, beat the egg yolks into garlic until the mixture is thick and pale yellow. Begin adding the oil a few drops at a time, beating continuously, until the sauce begins to emulsify. (The flow of oil can be increased to a fine stream as the sauce comes together.) Once all the oil has been added, add the lemon juice a teaspoon at a time to thin, if desired. Season to taste with salt. Use immediately, or transfer to an airtight container and refrigerate for up to 3 days.

It’s exactly what it sounds like: A scoop of vanilla ice cream and a hefty slice of pie go into the blender together, and out comes the ultimate dessert, a creamy shake with buttery crumbles of pie crust and ribbons of gorgeous fruit filling throughout.

  • One 3 in.-slice blueberry pie
  • 10 oz. vanilla ice cream, softened

A saltwater brine prevents fresh herbs from discoloring in this zesty chimichurri, adapted from a recipe in Argentine chef Francis Mallmann’s Seven Fires. The bright condiment pairs beautifully with steak, vegetables, and crunchy bread served straight off the grill.

This recipe first ran alongside a rib eye recipe with Shane Mitchell’s 2013 article, “The Art of the Parilla.”

Time: 35 minutes
  • 1 Tbsp. kosher salt
  • 1 cup finely chopped fresh parsley
  • ¾ cup finely chopped fresh oregano
  • 8 garlic cloves, finely chopped
  • 1½ tsp. crushed red chile flakes
  • ⅓ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • Freshly ground black pepper

Instructions

  1. In a small pot, bring the salt and 1 cup water to a boil. Remove from the heat and set aside to cool to room temperature.
  2. To a small bowl, add the parsley, oregano, garlic, chile flakes, olive oil, vinegar, and black pepper. Stir in the saltwater brine, then let the chimichurri sit at room temperature for at least 30 minutes and up to 3 hours. Use the chimichurri immediately, or transfer to an airtight container and refrigerate for up to 3 weeks.

We got the recipe for this tangy Kansas City barbecue sauce from Remus Powers, who founded the Diddy-Wa-Diddy National Barbecue Sauce Contest, now part of the American Royal BBQ Contest, the world’s biggest competitive BBQ cookoff. It’s perfect over ribs, chicken, or any grilled or barbecued meat.

  • ¼ tsp. allspice
  • ¼ tsp. ground cinnamon
  • ¼ tsp. ground mace
  • ¼ tsp. freshly ground black pepper
  • ¼ tsp. curry powder
  • ¼ tsp. chili powder
  • ¼ tsp. paprika
  • ¼ cup distilled white vinegar
  • ¼ tsp. hot sauce, such as Tabasco
  • 1 cup ketchup
  • ⅓ cup molasses

Instructions

  1. Into a medium bowl, sift together the allspice, cinnamon, mace, black pepper, curry powder, chili powder, and paprika. Stir in the vinegar, followed by the hot sauce, ketchup, and molasses, mixing until very well blended before adding the next ingredient. Serve warm or at room temperature. The sauce may be stored in an airtight container in the fridge for 2–3 weeks or in the freezer for up to 6 months.

This ginger scallion noodle recipe, adapted from Momofuku: A Cookbook, by David Chang and Peter Meehan, pays homage to one of one of the most celebrated restaurant dishes in New York City: the $6.95 “lo mien with ginger and scallions” at Great N.Y. Noodletown in Manhattan’s Chinatown district.

Ginger scallion sauce is a mother sauce for Chang, who uses it often at his restaurants. You should too: Stir a few tablespoons into a bowl of hot noodles, drizzle it over rice topped with a fried egg, or use it as a condiment for grilled meat or seafood.

Yield: Serves 4
Time: 25 minutes
  • 2 <sup>1</sup>⁄<sub>2</sub> cups thinly sliced scallions (greens and whites, from 1–2 large bunches)
  • <sup>1</sup>⁄<sub>2</sub> cup finely grated peeled fresh ginger
  • <sup>1</sup>⁄<sub>4</sub> cup grapeseed or other neutral oil
  • 1 <sup>1</sup>⁄<sub>2</sub> tsp. light soy sauce

This chunky, creamy guacamole from Mexico-born chef Roberto Santibáñez is made in the traditional manner: by first grinding the flavoring agents to a paste using a molcajete, then gently mixing in chopped avocados. Serrano chiles give this avocado dip a light heat while the acidity from fresh limes keeps it bright and zesty. Mortar and pestles may be bulky, but the grinding action is essential to making dips and pastes with a richer texture.

  • ¼ cup finely chopped cilantro, divided
  • 2 Tbsp. finely chopped white onion
  • ½ tsp. kosher salt

  • 2 small ripe avocados, pitted and coarsely chopped

Instructions

It has been suggested that tuna tartare was invented in Beverly Hills in 1984 by a French-trained Japanese chef named Shigefumi Tachibe. By the late 1990s, this quintessential “fusion” dish had exploded in popularity and its presence on upscale restaurant and catering menus throughout the United States was emblematic of a decade of American cuisine.

I grew up in the 1980s and 90s and loved ordering this briny raw fish dish with my parents for special occasions. Now that sushi-grade tuna is readily available at Japanese grocery stores and online, it’s easy to recreate the brasserie classic at home. I developed this simple, wasabi-spiked recipe based on versions served widely throughout New England at the time.

If you prefer a bit of tropical sweetness in your tartare, feel free to toss a quarter cup of diced pineapple or mango in with the avocado pieces. When serving raw fish, freshness is essential for ensuring safety. Be sure to purchase sushi-grade tuna from a reputable source; the fish should be firm to the touch and deep red in color, with no trace of slime or fishy fragrance. And finally, serve it within 24 hours of purchasing.

Time: 35 minutes
  • ¾ lb. sushi-grade tuna, trimmed of skin and dark meat
  • 1 Tbsp. mirin
  • 1 Tbsp. soy sauce
  • 1 tsp. sesame oil, plus more for drizzling
  • ¼ tsp. prepared wasabi paste (optional)
  • 1 tsp. sesame seeds, plus more for sprinkling (a mix of black and white)
  • 1 avocado, peeled, pitted, and cut into ¼-in. cubes
  • 1 tsp. extra-virgin olive oil
  • 2 tsp. rice vinegar or champagne vinegar
  • Kosher salt and freshly ground black pepper
  • Scallion ribbons, for garnish
  • Potato chips

Instructions

  1. Wrap the tuna tightly in plastic wrap, then freeze it until firm but not solid, 20–40 minutes, depending on the thickness of the steak(s).
  2. In a medium bowl, whisk together the mirin, soy sauce, sesame oil, and wasabi paste (if using).
  3. Unwrap the tuna. and, using a very sharp knife, cut it into ¼-inch cubes. Transfer to the bowl with the mirin mixture, then add the sesame seeds and turn to coat; set aside.
  4. In a small bowl, gently toss together the avocado, olive oil, vinegar, and salt and black pepper to taste.
  5. Stand a 3-inch round biscuit cutter in the center of a small plate. Fill with one fourth of the avocado mixture, then top with one fourth of the tuna mixture, pressing gently after each addition. Lift off the mold. Repeat with the remaining avocado and tartare. Drizzle each serving with sesame oil, then sprinkle with sesame seeds and top with the scallions. Serve immediately, with potato chips for scooping.
