“Cake salé” is a catch-all term for the humble savory loaves popular among French home cooks. This Alsace-inspired variation, studded with bacon, Gruyère, and caramelized onion, tastes great straight from the oven, but it’s even better reheated (cooling it completely tenderizes the crumb). Store any leftovers in the refrigerator.

Yield: Makes 1 loaf
Time: 1 hour 35 minutes
  • 5 Tbsp. unsalted butter, melted and cooled slightly, plus more as needed
  • 8 oz. bacon, cut crosswise into ¼-in. lardons
  • 1 medium yellow onion, thinly sliced
  • 1 cup full-fat (whole) buttermilk
  • 1 Tbsp. extra-virgin olive oil, plus more if needed
  • 2 large eggs, preferably at room temperature
  • 2½ cups all-purpose flour (10½ oz.)
  • 1½ tsp. baking powder
  • ¾ tsp. fine salt
  • ½ tsp. baking soda
  • ½ tsp. freshly ground black pepper
  • 8 oz. grated Comté, Gruyère, or aged cheddar (2 cups)
  • 3 Tbsp. finely chopped parsley leaves

Instructions

  1. Position a rack in the center of the oven and preheat to 350°F. Butter and flour a metal 9-by-5-inch loaf pan, tapping out any excess flour. 
  2. In a large skillet set over low heat, cook the lardons until golden brown and their fat has rendered, about 15 minutes. Using a slotted spoon, transfer to a small bowl. 
  3. To the pan with the rendered fat, add the onion and turn the heat to medium. (If the pan looks dry, add a tablespoon of butter.) Cook, stirring occasionally, until soft and golden brown, about 10 minutes. 
  4. Meanwhile, in a medium bowl, whisk together the buttermilk, oil, and eggs, then whisk in the melted butter. 
  5. In a large bowl, whisk together the flour, baking powder, salt, baking soda, and black pepper. Stir in the cheese, parsley, and reserved bacon. Add the buttermilk mixture, then use a silicone spatula to fold together the wet and dry ingredients until no streaks of flour remain. 
  6. Scrape the dough into the prepared pan and bake until a toothpick inserted into the center of the loaf comes out clean or with a few crumbs attached, 45–50 minutes. Allow to cool for 10 minutes before unmolding, then serve warm or at room temperature.

This exceptional apricot soufflé recipe comes to us from Café Jacqueline in San Francisco, a cozy bistro that serves homestyle French fare in a chandeliered dining room. Of proprietor Jacqueline Margulis’s many delectable soufflés, this is our favorite, especially come late spring and summer, when fresh apricots are in season. The soufflé will begin to fall the moment it’s pulled from the oven, but any change in appearance won’t affect the taste. 

Yield: 4
Time: 45 minutes
  • Unsalted butter, for greasing
  • ¾ cup heavy cream
  • ¼ cup sugar, plus more for dusting
  • 2¼ tsp. all-purpose flour
  • 5 large fresh apricots, 4 coarsely chopped, 1 thinly sliced
  • 1 tsp. kirsch
  • 4 large room-temperature eggs, separated
  • ⅛ tsp. cream of tartar
  • Confectioners sugar, for dusting

Instructions

  1. Preheat the oven to 450°F. Position a rack low enough in the oven to allow the soufflé room to rise as much as 2 inches above the rim. Butter a 6½-inch-diameter soufflé dish, then dust with sugar, tapping out any excess.
  2. To a medium pot over medium heat, add the cream, sugar, flour, and chopped apricots. Bring to a simmer and cook, whisking, until thick, about 3 minutes. Remove from the heat and whisk in the kirsch. One at a time, whisk in the egg yolks. Spread ¼ cup of the apricot mixture evenly on the bottom of the soufflé dish; set aside the rest.
  3. Using a stand or handheld mixer, beat the egg whites until foamy. Add the cream of tartar and beat until stiff peaks form. Using a silicone spatula, gently fold about one third of the egg whites into the remaining apricot mixture. Repeat, folding in the remaining whites in two batches. (Do not over-mix.) Scrape into the soufflé dish. 
  4. Bake until puffed and browned (but still slightly jiggly), 12–15 minutes. Dust generously with confectioners sugar and fan the sliced apricot on top. Serve immediately.

This traditional aïoli recipe comes to us from the inn Relais Notre-Dame in Alpes de Haute Provence. The garlicky sauce perfectly illustrates Provence’s culinary touchstones: simple preparations and local ingredients. Throughout Southern France, the silky, mayo-like condiment is served alongside meats, seafood, and raw or roasted vegetables as the centerpiece of a “grand aïoli.”We find it just as delicious paired with crispy frites

Yield: about 2 cups
Time: 13 minutes
  • 6 cloves garlic, peeled
  • Coarse salt
  • 2 large egg yolks
  • 2 cups extra-virgin olive oil
  • 1 Tbsp. fresh lemon juice

Instructions

  1. To the bowl of a mortar, add the garlic and a generous pinch of salt. Use the pestle to pound the mixture into a smooth paste. Working with the pestle or a whisk, beat the egg yolks into garlic until the mixture is thick and pale yellow. Begin adding the oil a few drops at a time, beating continuously, until the sauce begins to emulsify. (The flow of oil can be increased to a fine stream as the sauce comes together.) Once all the oil has been added, add the lemon juice a teaspoon at a time to thin, if desired. Season to taste with salt. Use immediately, or transfer to an airtight container and refrigerate for up to 3 days.

This rhubarb red onion chutney recipe comes from Anna Lise Kvan, of Paris’s Holy Belly Café. She rightly calls it a labor of love since it requires patience and a little elbow grease—it’s important to keep stirring to make sure the rhubarb and onions caramelize without sticking. Make a big batch, so you can keep it in the fridge for up to two weeks. She suggests pairing the chutney with roasted pork cutlets or tenderloin, or spreading it on turkey, chicken, or ham sandwiches. We also like adding it to grilled cheeses and charcuterie boards.

  • 2 Tbsp. unsalted butter
  • 2 Tbsp. olive oil
  • 4 medium red onions, thinly sliced (7 cups)

  • 2 whole cloves
  • 6 rhubarb stalks, cut into 1⁄4-in. pieces (4 1⁄2 cups)
  • 1 Tbsp. finely grated lemon zest

Instructions

  1. In a medium pot over medium heat, heat the butter and oil until the butter melts and begins to foam, about 2 minutes. Add the onions and cook, stirring occasionally, until the onions are jammy and deep brown, about 1 hour. Add the salt, sugar, black pepper, cloves, and rhubarb and turn the heat to low. Cook, stirring occasionally, until the rhubarb is soft and broken down, about 50 minutes. Remove from the heat and stir in the lemon zest.

Credited with the invention of this famous chilled potato leek soup, Chef Louis Diat of New York City’s original Ritz-Carlton Hotel once prepared eight portions of the dish to be delivered to the Manhattan townhouse of Sara Delano Roosevelt, Franklin D.’s mother—and enclosed this vichyssoise recipe. The best potatoes to use for something like vichyssoise are low-starch varieties, such as Yukon Golds, which will retain their creamy flavor and velvety texture even after a long cooking and double-straining process.

Time: 3 hours 40 minutes
  • 4 Tbsp. (2 oz.) unsalted butter
  • 4 leeks, white and light green parts only, thinly sliced
  • 1 medium onion, thinly sliced
  • 5 medium potatoes (about 2¼ lbs.), peeled and thinly sliced
  • Kosher salt
  • 2 cups whole milk
  • 2 cups light cream
  • 1 cup heavy cream
  • 2 Tbsp. finely chopped chives

Instructions

  1. In a large pot over medium-low heat, melt the butter. Add the leeks and onion and cook, stirring occasionally, until soft but not browned, about 20 minutes. Add the potatoes, 4 cups water, and salt to taste, and turn up the heat to high to bring it to a boil. Turn down the heat to medium-low, and continue cooking, stirring occasionally, until the potatoes are soft, 50–60 minutes.
  2. Set a fine sieve over a medium bowl and strain the soup, pressing and scraping the solids with a spoon. Wipe the pot clean and return the strained soup to it. Whisk in the milk and light cream, bring the soup to a boil over high heat, then remove from heat and let cool.
  3. Set the sieve over a medium bowl and strain the soup again, pressing and scraping with the spoon. Discard any solids that remain in the sieve. Stir the heavy cream into soup, then cover and refrigerate until chilled, for at least 2 and up to 24 hours. Season soup with salt to taste just before serving.
  4. To serve, divide the vichyssoise among soup bowls and garnish with chives.

Time: 5 hours 30 minutes
  • ¾ cups raw sugar, such as demerara or turbinado
  • 1 vanilla bean, split lengthwise, seeds scraped and pod reserved
  • 1 oz. Clément Créole Shrubb or Cointreau
  • 3 cups sugar, divided
  • 2 Tbsp. plus 1½ tsp. pectin
  • Vegetable oil, for greasing
  • 12 oz. rhubarb (2 medium stalks), cleaned and coarsely chopped
  • 1 Tbsp. plus 1½ tsp. light corn syrup
  • 7 oz. strawberries, hulled
  • 1 Tbsp. fresh lemon juice

Instructions

  1. Position a rack in the center of the oven and preheat to 200°F. In a small bowl, rub the vanilla seeds into the raw sugar until incorporated. Pour in the Shrubb and stir to combine. Using a silicone spatula, spread the sugar mixture in an even layer on a parchment-lined baking sheet. Bake with the oven door slightly ajar until dried, about 30 minutes. Remove from the oven, and when cool enough to handle, use your hands to crumble; set aside.
  2. Oil an 8-by-8-inch baking pan and line with parchment. In a small bowl, whisk together the pectin and ¼ cup of the sugar; set aside.
  3. To a medium pot set over medium-high heat, add the vanilla pod, rhubarb, and 1 cup of the sugar and cook until the rhubarb is soft, 8–10 minutes; set aside to cool, about 45 minutes.
  4. Discard the vanilla pod and transfer the rhubarb mixture to a blender (do not clean the pot). Add the corn syrup and strawberries and purée, then pour back into the pot and turn the heat to high. When the liquid boils, whisk in the pectin mixture and cook, stirring continuously, until dissolved, 1–2 minutes. Whisk in 1 cup of the sugar and cook, stirring continuously, until dissolved, 1–2 minutes more. Repeat with the remaining sugar, then continue cooking until the mixture has thickened and a thermometer reads 175°F, about 5 minutes more. Stir in the lemon juice, then pour into the prepared pan. Let stand at room temperature until set, about 4 hours.
  5. To serve, cut the pâte de fruit into 1-inch squares and sprinkle with the reserved Shrubb sugar. (Pâte de fruit will keep in an airtight container at room temperature for up to 1 month.)

Too much asparagus might be the definition of a fancy problem, but there I was, looking down at three hefty bunches I impulse-bought on sale. My usual move when faced with a surfeit of veg is to blitz it into a puréed soup, but then I wondered—could asparagus be transformed into a silky, pastel-green sauce for pasta? 

The answer, I discovered through trial and error, is a resounding “yes,” especially when you blend peas into the sauce and keep it nice and green by adding a handful of fresh arugula (asparagus, I remembered while testing, isn’t the prettiest shade when cooked). 

Morels, shallots, lemon zest, Pecorino—these are the add-ins I wound up loving the most, since they play well together and all but scream spring. Enjoy this asparagus pasta recipe hot—and then (if you’re like me), enjoy it even more the next day straight from the fridge, with an extra squeeze of lemon juice and a generous drizzle of olive oil.

Yield: 4–6
Time: 50 minutes
  • 1½ lb. asparagus (see footnote), bottom inch removed
  • Kosher salt and freshly ground black pepper
  • 2 Tbsp. extra-virgin olive oil, plus more for garnish
  • 8 oz. mushrooms, such as morels, chanterelles, or shiitakes, cleaned, trimmed, and sliced ¼-in. thick (3 cups)
  • 6 Tbsp. unsalted butter, divided
  • ⅔ cup finely chopped shallots
  • 2 cups packed arugula leaves
  • 1 cup peas, fresh or frozen
  • 1 lb. farfalle (bowtie) pasta
  • 1 cup packed finely grated Pecorino Romano, plus more for garnish
  • 2 tsp. finely grated lemon zest
  • ¼ cup fresh lemon juice

Instructions

  1. Peel the bottom half of the asparagus stalks down to the white flesh. Remove and reserve the tips, then coarsely chop the stalks.
  2. To a large pot set over medium-high heat, add the oil. When it’s shimmering and hot, add the mushrooms and asparagus tips and season with salt. Cook, stirring occasionally, until tender and browned, about 7 minutes. Add 2 tablespoons of the butter, stir until melted, then scrape into a bowl and set aside.
  3. To the empty pot, add 2 tablespoons of the butter, the shallots, and asparagus stalks and turn the heat to medium. Cover and cook, stirring occasionally, until the stalks are al dente, about 8 minutes. Add 4½ cups of water and bring to a boil. Add the arugula and peas and boil for 1 minute more. Using an immersion (or regular) blender, process until it’s as smooth as possible. Add salt to taste (it should be assertively seasoned).
  4. Add the farfalle, turn the heat to medium, and cover. Boil, stirring and scraping the bottom of the pot every 2 minutes on the dot to prevent sticking, until the pasta is nearly al dente, about 9 minutes.
  5. Uncover, turn the heat to medium-high, and cook, stirring every 15 seconds, until the sauce has thickened and the pasta is al dente, 3–5 minutes more. Add the Pecorino, lemon zest and juice, remaining 2 tablespoons of butter, and half of the mushroom- asparagus mixture and cook for 1 minute more. Season with black pepper to taste.
  6. To serve, divide the pasta among 4–6 bowls. Garnish each with the remaining asparagus-mushroom mixture, then drizzle with oil and sprinkle with Pecorino.

Note: Seek out asparagus that are ½ inch thick (thinner asparagus can be stringy, and thicker can be woody). Peeling the stalks in step 1 is essential as fibrous bottoms make for a far less creamy sauce.

Canon Félix Kir, a French Résistance hero and later mayor of Dijon, lent his name to this simple wine cocktail traditionally made with the rustic Burgundian variety called aligoté. When Champagne is used instead of white wine, the drink becomes a kir royale. Don’t be tempted to stint on the amount of crème de cassis—Burgundy’s famed blackcurrant liqueur—to yield a faint pink drink; both common and royal iterations should properly have a dark rosy hue.

  • 6 oz. brut Champagne or other dry sparkling wine
  • ½ oz. crème de cassis
  • Fresh blackberries, for garnish

Instructions

  1. To a chilled Champagne flute, add the crème de cassis. Top with Champagne and garnish with blackberries. Serve immediately.

Let me share something with you: I love bread. Baking (and then consuming) a homemade loaf is one of life’s most enjoyable simple pleasures. I admit that the process does require a bit of planning—and a few hours of downtime. And yet the results are incredibly rewarding and absolutely worth the effort. As someone who, years ago, became obsessed with baking bread and then went on to work in a professional bakery, I always advocate for home cooks to try their hand at making their own bread at home. Learning how to make a baguette is a simple and straightforward starting point.

Much like the simple roast chicken or sky-high soufflé, a perfectly executed baguette is considered one of the best marks by which to judge a master of culinary craft. French President Emmanuel Macron successfully advocated to include the slender loaves in UNESCO’s list of “Intangible Cultural Heritage”—a process that took six years to provide the necessary documentation! Amateur bakers tend to test the waters by making boules, bâtards, and pan loaves. A baguette, on the other hand, can seem a bit more intimidating. In reality, these loaves require only a handful of tools and ingredients that you likely already have in the kitchen, and are achievable for anyone with a hot oven and some time. Though your first attempt might not look exactly like those at your local bakery, learning how to make a baguette is all about practice (and enjoying the fresh-baked results).

What you need:

Tools:

  • 2 large mixing bowls or a stand mixer fitted with dough hook attachment
  • Digital Scale*
  • Whisk
  • Bench Scraper
  • Cast iron skillet 
  • Parchment paper
  • Baking Sheet 
  • Very sharp paring knife, razor blade, or bread lame

Ingredients:

  • 1½ cups (355 g) warm (not hot!) tap water (between 105°F-115°F)
  • 1½ tsp. (5 g) active dry yeast**
  • 3¼ cups (462 g) all-purpose flour***  
  • 1¾ tsp. (5 g) kosher salt
  • Neutral oil, such as canola, sunflower, or vegetable, for greasing
  • 2 cups boiling water (very hot tap water can also be used)

*I highly recommend investing in a digital scale for use in any home baking project. In a professional bakery, every ingredient is measured in grams. This is for a few main reasons: Multiples of 10 are incredibly easy to scale up and down as needed, and gram measurements are more precise than pounds and ounces and more accurate than cups and tablespoons. 

**Bread flour can also be used in this method, although its higher protein content will make for a “stronger” dough, with more elasticity when proofing and shaping.

***You are also welcome to substitute instant dry yeast for active dry yeast, just be aware that the fermentation time when using the instant version will be slightly faster. This will speed up fermentation and proofing times by about 15 minutes at each stage. I prefer to use active dry yeast in this recipe because a slower fermentation time results in a more flavorful final product.

BEFORE YOU BEGIN

Traditional baguettes are made using a type of preferment called a poolish. This mixture of yeast, flour, and water is mixed a few hours ahead of time, then added to the final dough to increase its “extensibility” (in other words, stretchiness, which makes shaping easier). It also lends the finished product a more complex and yeasty flavor than breads made with “straight doughs” mixed without preferments. The loaves are also often cold-proofed for several hours (and even overnight) to increase flavor depth as well. The method in this streamlined tutorial skips those steps, and instead shortens the entire process to about four hours. If you want to get a head start (and a more pronounced flavor), cover the shaped loaves with a tea towel and proof overnight in the fridge before scoring and baking them, as described below, the following morning. 

STEP 1: Mix and knead the dough.

In a large bowl, whisk together the water and active dry yeast, then set aside at room temperature until slightly foamy, about 10 minutes. (If the yeast does not begin to foam at the surface, it’s probably past its prime. Discard it and grab some fresh yeast before continuing.) Add the flour, then, using a fork or your hand, stir until all the flour is absorbed and there are no dry pockets. Set aside to allow the flour to hydrate for 20 minutes.*

Lightly flour a clean work surface. Sprinkle the salt over the dough, then transfer to the surface and knead until all the salt is incorporated and the dough is elastic and mostly smooth, 9–12 minutes. (If using a stand mixer, mix the dough on medium-low speed for 4–5 minutes.) Form the dough into a ball. Lightly grease a clean, large bowl, transfer the dough into it, cover, and set aside until the dough has nearly doubled in size, about 45 minutes. Note: The warmer and more humid the environment in your kitchen, the faster your dough will rise. During the colder months, one of my favorite techniques is to ferment the dough right in my oven with the pilot light on, or near a warm radiator. 

Letting the dough hydrate and rest before adding the salt is a process known as autolyse. This process allows gluten bonds to start forming gently—before you start working the dough—reducing kneading time and resulting in a more irregular, open crumb structure.

STEP 2: Stretch and fold the dough.

Imagine your dough ball as having four corners. Grab the top two corners (furthest from you) and lift them up and away from the sides of the bowl, folding them over towards you. Rotate the bowl 180 degrees and repeat. Now do the same with the right and left sides, respectively. Your dough should now resemble a folded envelope. Carefully remove the “envelope” from the bowl and invert it, placing it back in the bowl, seam side down. Cover the bowl with plastic wrap and return to a warm area until doubled in size again, another 45 minutes to an hour. 

You may be used to seeing bread recipes that instruct you to “punch down” the dough (in other words, deflate the dough of any gasses formed during the fermentation process). I don’t like to do that here, because removing these gasses can lead to a denser loaf. Instead, this folding process helps to both redistribute the entrapped gasses and ensure a more even temperature throughout the dough.

STEP 3: Cut the dough into three pieces.

Carefully transfer the dough to your lightly floured surface, once again taking care to not deflate it excessively. Place a large cast iron pan on the floor of your oven, adjust the oven rack to the center position, and  preheat to 450ºF. Using a bench scraper or sharp knife, divide the dough into three equal pieces (extra credit here if you have a kitchen scale!). Roll each piece into a tight oval (the dough should be springy if you poke it with your finger). Cover the ovals with plastic wrap or a tea towel and set aside at room temperature until the dough is “relaxed,” 15–20 minutes.

STEP 4: Shape and final proof the baguettes

Line a large baking sheet with parchment paper, dust lightly with flour, and set aside. On your lightly floured work surface, lightly press and stretch one of the dough pieces into a rectangle. Pick up the top two corners and fold them towards you, stopping halfway. Repeat with the bottom corners (away from your body this time). The dough should now resemble a tube, with a seam running along the center. Place the tube seam-side-down, and repeat the process with the other two dough pieces. 

Then, go back to the first tube: Position your hands at the center, then carefully roll the log of dough back and forth, applying pressure toward either end and elongating the dough as you go. Repeat this process a couple of times until the loaf is about 16 inches long, and tapered at the ends. Continue with the other two pieces of dough, then place the baguettes seam-side-down on the lined baking sheet. Cover with a sheet of plastic wrap or very slightly damp tea towel and set aside at room temperature until the loaves are slightly puffed up and the dough bounces back slightly when poked gently with your finger, 20–30 minutes.

STEP 5: Score and bake the baguettes.

After scoring your baguettes, you’ll want to move as quickly as possible when loading them into the oven, so be sure that it’s fully preheated before you proceed. 

Using a sharp knife or razor blade held at a 30 degree angle, cut four evenly spaced slashes along the top surface of each baguette. If you have a spray bottle on hand, give the loaves a light spritz of water, then, quickly and carefully transfer the baking sheet to the oven, pour at least 2 cups of boiling water into the hot cast iron skillet, and shut the oven door. Bake the loaves until golden brown, 25–30 minutes. Remove the baguettes from the oven and do your best to let them cool before diving in. 

A steamy oven is crucial for achieving a good rise and a thin and crispy crust. The steam created from the initial heat of the skillet will fill the oven, then condense and settle over the surface of the baking loaves. That moisture keeps the outside of the dough hydrated and springy, allowing for more “oven spring” as the loaves bake. Without steam, the outer layer of bread “crisps up” before the internal temperature has risen enough to cause the gasses to expand, and your bread can end up dense, hard, and misshapen.

Tip: Most home ovens have vents that let out steam, usually above and behind the cooktop. In order to retain as much steam as possible, I recommend using a rolled up kitchen towel to block these vents while you bake—every little bit of steam helps!

How to store leftover baguettes

Baguettes tend to go stale within a day or two, and leftovers are best kept at room temperature in a bread box or a waxed canvas or plastic bag. Fully cooled bread can also be wrapped tightly in plastic and stored in the freezer for several weeks. And should you find yourself with some stale leftovers, don’t throw them out. I like to cube stale bread, toast in a 375°F oven until golden-brown, then toss them in some olive oil and savory seasonings to make croutons. Or, simply pop the cubes in the food processor and blitz them down into homemade breadcrumbs.

The secret to making a perfect grilled cheese sandwich is cooking it over low heat, which brings out the subtle flavors of a cheese. Nutty and complex Comté, made in the Jura region of the French Alps, is great for grilling; if you can’t find it, Gruyère is a suitable substitute. Slathering the bread liberally with butter helps the bread crisp evenly in the pan.

This recipe first ran alongside Cara De Silva’s 2009 article, “The Real Thing.”

Time: 30 minutes
  • 4 Tbsp. unsalted butter, softened
  • Four ½-in. thick slices sourdough bread
  • 2⅓ cup (8 oz.) coarsely grated Comté cheese

Instructions

  1. Spread the butter evenly on both sides of each slice of bread. Put half of the cheese on one slice and half on another. Top each with remaining bread slices.
  2. Heat a large cast-iron skillet or griddle over medium-low heat. Add the sandwiches and cook, flipping once, until golden brown and crusty on both sides, 18–20 minutes. Transfer the sandwiches to a cutting board, cool slightly, then slice them in half and serve warm.
