“Cake salé” is a catch-all term for the humble savory loaves popular among French home cooks. This Alsace-inspired variation, studded with bacon, Gruyère, and caramelized onion, tastes great straight from the oven, but it’s even better reheated (cooling it completely tenderizes the crumb). Store any leftovers in the refrigerator.

Yield: Makes 1 loaf
Time: 1 hour 35 minutes
  • 5 Tbsp. unsalted butter, melted and cooled slightly, plus more as needed
  • 8 oz. bacon, cut crosswise into ¼-in. lardons
  • 1 medium yellow onion, thinly sliced
  • 1 cup full-fat (whole) buttermilk
  • 1 Tbsp. extra-virgin olive oil, plus more if needed
  • 2 large eggs, preferably at room temperature
  • 2½ cups all-purpose flour (10½ oz.)
  • 1½ tsp. baking powder
  • ¾ tsp. fine salt
  • ½ tsp. baking soda
  • ½ tsp. freshly ground black pepper
  • 8 oz. grated Comté, Gruyère, or aged cheddar (2 cups)
  • 3 Tbsp. finely chopped parsley leaves

Instructions

  1. Position a rack in the center of the oven and preheat to 350°F. Butter and flour a metal 9-by-5-inch loaf pan, tapping out any excess flour. 
  2. In a large skillet set over low heat, cook the lardons until golden brown and their fat has rendered, about 15 minutes. Using a slotted spoon, transfer to a small bowl. 
  3. To the pan with the rendered fat, add the onion and turn the heat to medium. (If the pan looks dry, add a tablespoon of butter.) Cook, stirring occasionally, until soft and golden brown, about 10 minutes. 
  4. Meanwhile, in a medium bowl, whisk together the buttermilk, oil, and eggs, then whisk in the melted butter. 
  5. In a large bowl, whisk together the flour, baking powder, salt, baking soda, and black pepper. Stir in the cheese, parsley, and reserved bacon. Add the buttermilk mixture, then use a silicone spatula to fold together the wet and dry ingredients until no streaks of flour remain. 
  6. Scrape the dough into the prepared pan and bake until a toothpick inserted into the center of the loaf comes out clean or with a few crumbs attached, 45–50 minutes. Allow to cool for 10 minutes before unmolding, then serve warm or at room temperature.

The late, great American cookbook author Marion Cunningham famously carried with her a photograph of a table loaded with angel food cakes, all slightly different: some tall, some short, some white and fluffy, some in a Bundt shape. The photo was taken at a meeting of the Baker’s Dozen, a group of pro bakers including Alice Medrich and Carol Field who met regularly to exchange problems and solutions. Each of the cakes was baked by the members from the same recipe. “If all our results were this different,” Cunningham sympathized, “think of the plight of the poor home cook.” This recipe in question is this one, from “cookie baker for the stars,” Tom Roach, adapted with a bit of Cunningham’s gentle advice.

Time: 1 hour 20 minutes
  • 1½ cup sifted cake flour
  • 1½ cup superfine sugar
  • 1½ cup egg whites (from 11–12 large eggs)
  • 1½ tsp. cream of tartar
  • 1 tsp. vanilla extract
  • ½ tsp. fine sea salt

Instructions

  1. Sift and measure flour. Add a third of the sugar and sift together three times. (M.C. prefers 1¼ cups granulated sugar to 1½ cups superfine sugar, which she feels makes the cake too sweet. She sifts the flour by itself and adds sugar directly to the egg whites.)
  2. Place into a large mixing bowl the egg whites, 2 tablespoons cold water, cream of tartar, vanilla, and salt—yes, all at once! Whip until barely stiff enough to hold a peak when the beater is lifted, but not dry. Gradually add the remaining sugar, 2–3 tablespoons at a time, whipping gently after each of the first few additions, then folding rather than beating towards the end. (M.C. sprinkles the sugar into the whites in four parts as she beats, until the whites are shiny and hold soft peaks.)
  3. Add the sifted flour and sugar, 3–4 tablespoons at a time, and fold gently until smooth after each addition. Pour the batter into an ungreased 10 tube pan and bake in a preheated 325°F oven about 1 hour. (M.C. sifts the flour into the egg whites as she’s folding it in.)
  4. Invert the angel food cake and cool completely before removing from pan. (M.C.: Or invert the pan on a bottle until cake cools.)

When I’m in charge of dessert but baking is the last thing I feel like doing, these dense and chewy raspberry chocolate blondies always save my skin. Something about the raspberries and almonds puts these bars in fancy-pants territory—even if the batter comes together in a single bowl. Feel free to customize this blondie recipe based on whatever’s lurking in the recesses of your cupboard: White chocolate instead of milk is a no-brainer here, or you can nix the berries and add ½ cup of toasted shredded coconut in their stead.

  • 7 Tbsp. unsalted butter, melted and cooled (see footnote), plus more for greasing
  • 1 cup brown sugar, light or dark
  • 1 tsp. vanilla extract
  • ½ tsp. almond extract
  • ½ tsp. fine salt
  • 1 large egg
  • 1 cup all-purpose flour
  • ¼ tsp. baking powder
  • ⅔ cup fresh raspberries
  • ½ cup coarsely chopped toasted almonds
  • ½ cup coarsely chopped milk chocolate, or chocolate chips

Instructions

  1. Position a rack in the center of the oven and preheat to 350°F. Butter an 8-by-8-inch baking pan, then line with parchment or foil, leaving a generous overhang on two sides. Butter the parchment.
  2. In a large bowl, whisk together the butter, brown sugar, vanilla, almond extract, salt, and egg. Sprinkle the baking powder evenly over the top, whisk to incorporate, then add the flour and whisk until just combined. Using a silicone spatula, gently fold in the raspberries, almonds and chocolate.
  3. Bake until the top is cracked and pale golden brown, 22–26 minutes (do not overbake). Cool in the pan, then (lifting the overhang) transfer to a cutting board and cut into squares as large or as small as you like.

Note: For extra-nutty blondies, melt the butter in a small pot set over medium-high heat. Continue to cook, using a silicone spatula to stir occasionally, until it turns light amber and smells nutty, about 2 minutes more. Transfer to a heatproof bowl and cool to room temperature before using in step 2.

Whether you call it a crisp or a crumble, this easy recipe from Stacy Adimando requires just a baking dish and a few bowls. Delicious right after it cools, sour cherry crumble is arguably even better the next day for breakfast. Using natural cane sugar—which is less refined and slightly coarser—helps keep it from being overly sweet.

Ingredients

For the crumb:

  • 1 cup all-purpose flour
  • <sup>1</sup>⁄<sub>2</sub> cup firmly packed light-brown sugar
  • 2 Tbsp. natural cane sugar
  • <sup>1</sup>⁄<sub>2</sub> tsp. ground cinnamon
  • <sup>1</sup>⁄<sub>2</sub> tsp. kosher salt
  • 9 Tbsp. (41/2 oz.) unsalted butter, cut into medium cubes

For filling and serving:

  • 8 cups fresh sour cherries (about 2 lb. 12 oz.)
  • ¼ cup tapioca flour (tapioca starch)
  • <sup>1</sup>⁄<sub>4</sub> cup natural cane sugar
  • 1 tsp. pure vanilla extract
  • Finely grated zest of ½ small lemon
  • 1 pinch ground cinnamon
  • 1 pinch kosher salt
  • Vanilla ice cream, for serving

Instructions

  1. Make the crumb: In a large bowl, mix the flour, both sugars, the cinnamon, and salt. Add the butter and squeeze the mixture firmly and repeatedly with your fingers, scooping up the bits from the bottom of the bowl until the mixture feels moist and comes together in golf-ball-size crumbles. Cover the bowl with plastic wrap and refrigerate until firm, about 30 minutes.
  2. When ready to bake, set a rack in the center of the oven and preheat to 350°F. Gently pit the cherries, recruiting help as needed, and transfer to a large bowl. Stir in the tapioca flour, sugar, vanilla, zest, cinnamon, and salt.
  3. Quickly transfer the cherry mixture to a 10-inch ceramic baking dish or pie plate. Sprinkle the topping evenly on top to cover the cherries, crumbling it into smaller pieces as you go.
  4. Bake on a foil-lined, rimmed baking sheet until the juices are thickened, syrupy, and bubbling slowly and the top is lightly golden, about 50 minutes. Remove to a wire rack and let cool completely (or nearly). Serve with vanilla ice cream.

The croissant is the most celebrated member of the family of butter- and sugar-enriched, yeasted pastries known as viennoiseries. They obtain their signature flaky texture through lamination, the process of coating a dough with fat and repeatedly folding and rolling it to create layers. Tartine owner Chad Robert­son insists on an unsalted, high-fat butter with at least 80 percent fat for laminating his straight-armed versions.

Recipe times may vary drastically depending on environmental factors, so be sure to mind the visual cues before moving on to the next step. If possible, use a scale to measure your ingredients and work in a cool room.

Ingredients

For the Preferment:

  • <sup>3</sup>⁄<sub>4</sub> cup (200 g) 2% milk
  • <sup>1</sup>⁄<sub>2</sub> tsp. (2 g) active dry yeast (not instant)
  • 1 <sup>1</sup>⁄<sub>4</sub> cups (175 g) bread flour

For the Dough:

  • 2 tsp. (8 g) active dry yeast (not instant)
  • 1 <sup>3</sup>⁄<sub>4</sub> cups (425 g) 2% milk
  • 5 <sup>1</sup>⁄<sub>4</sub> cups (800 g) bread flour, plus more as needed
  • <sup>1</sup>⁄<sub>3</sub> cup (70 g) sugar
  • 1 tbsp. plus 1 tsp. (22 g) fine sea salt
  • 1 tbsp. (12 g) unsalted butter, melted
  • 5 sticks (585 g) high-fat unsalted butter (look for European-style brands like Plugra, President, or Kerrygold) at room temperature
  • 3 large egg yolks
  • 2 tbsp. heavy cream

Instructions

  1. Make the preferment: In a small saucepan over low heat, warm the milk just enough to take the chill off. (The milk should not feel warm or cold to the touch, 80°–90°.)
  2. Pour the milk into a large bowl, then sprinkle in the yeast and stir to dissolve. Add the flour and mix with a wooden spoon until a smooth batter forms. Cover the bowl with a clean, dry kitchen towel and let the mixture rise until almost doubled in volume, 2½–3 hours at room temperature or overnight in the refrigerator.
  3. Make the dough: Transfer the pre­ferment to the large bowl of a stand mixer fitted with the dough hook. Set the milk, flour, sugar, salt, and melted butter nearby. Add the yeast to the preferment and mix on low speed, stopping to scrape down the sides of the bowl and bring together the ingredients as needed, until the yeast is incorporated and the mixture is an even, well-mixed mass, about 2 minutes. Raise the speed to medium, and while mixing, slowly add half of the milk. Continue to mix until fully incorporated. Turn off the mixer, then add the flour, sugar, salt, melted butter, and the remaining half of the milk. Mix on low speed until a loose dough forms, about 2 minutes. Return the speed to medium and mix until the dough is smooth and cohesive, 2 minutes more. Remove the hook and cover the bowl with a clean, dry kitchen towel. Let rise in a cool place until the volume has increased by nearly half, about 1½ hours.
  4. Transfer the dough to a lightly floured work surface and form it into a rough rectangle about 2 inches thick. Wrap tightly in plastic wrap and refrigerate until chilled through, 3–4 hours.
  5. One hour before laminating the dough, make your butter sheet. Place a large sheet of parchment paper or plastic wrap on a work surface. Add the butter to the center in a neat pile, then cover with a second sheet. Use a rolling pin to flatten and form the butter into a 12×18½-inch rectangle, peeling back the top sheet to manipulate the butter into shape as needed. Refrigerate to lightly chill but not fully resolidify, 5–10 minutes.
  6. Laminate the dough: Lightly flour a work surface. Retrieve and unwrap the dough, then roll it out to a 28×12-inch rectangle. With a long side facing you, peel the top sheet away from the butter and flip it over to cover the left two-thirds of the rectangle. Peel away the other sheet. Fold the uncovered third of the dough over the butter, then fold the left-hand third over the center, as if folding a business letter. With your fingers, push down along the seams on the top and the bottom to seal in the butter. Give the dough a quarter turn so that the seams are perpendicular to you. Roll out the dough once more into a 28×12-inch rectangle, and fold again in the same manner (no need to pinch the seams again). Wrap in plastic wrap and refrigerate for 1 hour to relax the gluten in the dough.
  7. Clean the work surface, dust again lightly with flour, and retrieve the dough. Unwrap and again roll out into a rectangle 28×12 inches. Fold into thirds so that the rectangle measures 9×12 inches and 1½–2 inches thick. Wrap in plastic and immediately freeze on a flat surface for at least 1 hour or up to 1 week. (if frozen for more than an hour, transfer the dough to the refrigerator to thaw overnight before using in the morning.)
  8. Three hours before you are ready to serve, form and proof the croissants: Remove the thawed dough from the refrigerator. Line 3 baking sheets with parchment paper and set aside. Lightly dust a work surface with flour and roll into a 12×40-inch rectangle about 1⁄8 inch thick. Use a straight edge and a paring knife or pizza cutter to carefully trim 1 inch from each of the long sides; save for another use. Cut the remaining dough into 14 triangles, 4 inches at the base and 10 inches tall. Working one at a time, stretch the triangles slightly to extend them to 11 inches. Then, starting at the base, roll each tightly all the way to the tip to form an even, straight-armed croissant shape. Press slightly at the tip to adhere and to make a slightly flattened base for the croissant to rest on. Continue rolling the croissants in this manner, then transfer them, spaced evenly apart and flattened side down on the prepared baking sheets (no more than 6 croissants per baking sheet).
  9. Preheat the oven to 400° and set the racks at least 4 inches apart. (If you only have room for 2 racks, the croissants should be baked in 2 rounds.) Set a large, wide baking dish filled with water on the floor of the oven. Place the baking sheets in a warm, preferably humid spot and let rise until the croissants are puffed, very gassy, and about doubled in size (they should slowly spring back when poked with your fingertip and jiggle slightly like gelatin when the tray is shaken), 60–80 minutes.
  10. In a small bowl, beat the yolks and heavy cream. Brush the risen croissants evenly with the mixture and bake, without opening the oven, until the croissants begin to color, 20–22 minutes. Rotate the pans and continue cooking until evenly golden, 6–8 minutes more. Let cool slightly before serving.

Lead viennoisier, Fausto Echeverria, uses a high-fat, European-style butter from Oregon to laminate Tartine’s croissant dough. First, a thin sheet of butter is laid on top of the dough before it is folded into thirds (1). Then, Echeverria rolls the dough out a second time (2), before folding it again in thirds like a letter (3, 4). After a short rest in the fridge, the folding process is repeated once more. The dough is then rested again for several hours to relax the gluten. After the final rest, the dough can be sheeted out and shaped into croissants, danish, and morning buns.

There’s nothing like a pizza hot from the oven—the cheese still bubbling atop a puffy, blistered crust. Until recently, that kind of pizza perfection was limited to restaurants with seasoned pizzaiolos and wood-burning ovens. My homemade pies were lackluster at best; conventional ovens, I learned, don’t get ripping-hot enough to achieve that crispy, chewy crust.

But a year ago, Ooni’s gas-fueled oven changed the game at my house—as it did for many cooks across the country. Suddenly I had the power to turn out beautiful pizzas on my back patio in record time. What was once a lost cause became an obsession as I perfected my dough’s hydration levels and fermentation time, and experimented with sauces and toppings. 

There was only one hitch—subjecting myself to whatever extreme weather had landed on my doorstep didn’t always appeal. Enter the Ooni Volt 12, the first indoor pizza oven of its kind. It hit the market this spring and has quickly become my go-to rain-or-shine pizza partner.

At first glance, the Volt 12 resembles Ooni’s other products, with its black casing and gray accents. However, the Volt 12 has a triple-paned borosilicate glass door with a handle that remains cool to the touch—even when the inside of the oven is a roaring 850 degrees Fahrenheit. I found that the door (and the entire oven) is so well insulated that very little heat escapes at all, making it welcome in small kitchens prone to overheating.

The Volt 12 is also exceptionally precise. Whereas flames require close monitoring and are harder to control, the Volt 12’s electric heating coils are regulated via a temperature dial (we love a dial!). Additionally, there are adjustable heating elements both above and below the pizza stone. Whether I’m going full leopard on a Neapolitan pie or channeling my favorite New York pizzeria, the ability to turn things up or down mid-bake helps prevent soggy bottoms and charred tops.

Then there’s the stone. Forget preheating for an hour (while your house preheats, too): The Ooni Volt 12 reaches its maximum temperature within 20 minutes and quickly comes back up to temperature between pizzas. I also found the 13-inch stone to be quite roomy for my needs; a deep-dish pan fits easily inside. Its generous size offered more wiggle room when rotating the pizza as well, something that has to be performed with urgency and precision when cooking with an open flame. (Unfortunately, pizza-turning is a skill you’ll have to master on your own, regardless of how fantastic your pizza oven is.)

The built-in timer is also a welcome tool, particularly when I’m cooking on my second glass of wine, or when there’s commotion (cinders are not a crowd-pleasing topping at a pizza party, it turns out). Equally helpful is the oven light, which helps me watch the pizza’s progress, and the ability to instantly change the temperature or balance the heating elements.

Overall, the Volt 12 accomplishes everything it sets out to do, and more. Not only is it a perfect oven for indoor cooking—it is weather-resistant and portable (it even has handles), so it can come along on adventures—as long as there’s a plug. There’s also no chance of running out of propane or wood at an inopportune time, a particular type of agony that will stop pizza night in its tracks.

As I’ve realized over the last few months, a well-made pizza oven is an investment that pays off—in pizza, family fun, and happiness.

In Alaska, wild blueberries (also called Kyani berries) are picked in the summer and frozen for use throughout the winter, especially in pies. During crunch time just before the Iditarod, locals have been known to resort to commercial crusts; when time allows, we like to make this flaky all-butter crust from scratch. (This pie recipe is a favorite of longtime Takotna, Alaska resident Nell Huffman, and is adapted from The Joy of Blueberries by Theresa Millang.)

Yield: makes one 9-inch pie
Time: 1 hour 30 minutes
  • Dough for two prepared pie crusts, homemade or store-bought
  • 2 Tbsp. all-purpose flour, plus more for rolling the dough
  • ½ cup sugar
  • ¼ tsp. ground cinnamon
  • ¼ tsp. nutmeg
  • ¼ tsp. kosher salt
  • 6 cups blueberries (fresh or frozen)
  • 1 tsp. vanilla extract
  • 1 Tbsp. unsalted butter, cut into small pieces
  • 1 Tbsp. whole milk
  • 1 large egg yolk
  • Coarse sugar, for sprinkling (optional)

Instructions

  1. Position a rack in the lower third of the oven and preheat to 400°F.
  2. About 15 minutes before rolling out the pie dough, remove it from the refrigerator to soften slightly. Lightly flour a clean work surface and a rolling pin. Roll out one of the pieces of dough into an even, ¼-inch-thick circle, then carefully lift the dough into a 9-inch aluminum or glass pie plate. Use a sharp knife to trim the edges, leaving 1 inch of overhang all the way around.
  3. In a large bowl, stir together the flour, sugar, cinnamon, nutmeg, and salt. Add the blueberries and vanilla and toss well to coat, then transfer the filling to the pie shell, mounding the berries slightly in the center. Dot the surface of the berries with the butter.
  4. Once again, lightly flour your work surface and rolling pin. Roll out the second piece of dough into an even, ¼-inch-thick circle, then carefully lift the dough and place it over the berry mixture. Use a sharp knife to trim the edges, leaving about 1½ inches of overhang all the way around, then tuck the edges of the top crust under the edges of the bottom crust. Pinch the edges together decoratively to seal, or use the tines of a fork to crimp all the way around. Using the tip of a paring knife, make 6–8 slits on the surface of the crust to vent. Place the pie in the freezer just until the crust is firm, about 15 minutes.
  5. In a small bowl, whisk together the milk and egg yolk. Brush the surface of the pie crust with the egg wash and sprinkle with coarse sugar, if using. Place the pie on a large, rimmed baking sheet and bake until the crust is set and just beginning to brown, 20–25 minutes. Turn the temperature to 350°F and continue baking until the crust is evenly golden brown and the juices are bubbling and thickened, 30–40 minutes more for fresh berries or 60–70 minutes more for frozen. (If the edges begin to darken before the filling has thickened, cover them with strips of aluminum foil to finish baking.) Cool to room temperature before cutting into slices and serving.

A woman from a family in North Haven, Maine gave this recipe to Nancy Harmon Jenkins and told her the story of the recipe’s origins: A Swedish au pair named Lotta came to Maine and fell in love with either the father or the eldest son of the host family (that particular detail was lost to time). Lotta was promptly sent back to Sweden but left behind this elegant open-topped wild blueberry tart recipe. Look for the tiny, sweet wild berries at your local grocery store (Wyman’s is a popular brand), or online, or substitute regular blueberries. Glazing the tart (see step 5) is an optional step that makes the dessert all the more stunning.

Yield: 8
  • 1 cup rolled oats
  • 1⁄4 cup finely chopped blanched almonds or walnuts
  • 14 Tbsp. unsalted butter, at room temperature
  • 1⁄2 cup plus 3 Tbsp. sugar, divided
  • 1 tsp. vanilla extract
  • Pinch ground cinnamon
  • Pinch fine salt
  • 1¼ cups all-purpose flour
  • 3½ cups blueberries, preferably wild
  • 2 Tbsp. cornstarch
  • 2 tsp. finely grated lemon zest
  • 1⁄4 cup red currant jelly or strawberry or raspberry jam (optional)
  • Whipped cream and vanilla ice cream, for serving (optional)

Instructions

  1. To a food processor, add the rolled oats and pulse to the texture of flour, 5–6 pulses. Add the chopped nuts and process until the mixture resembles coarse sand, 5–6 pulses more.
  2. Using a stand or handheld mixer on medium-high speed, beat the butter and ½ cup of the sugar until fluffy. Beat in the vanilla, cinnamon, and salt. Add the oat mixture and flour and, using your hands, mix to form a shaggy dough. Transfer to an unfloured work surface, shape into a flat disk, then press the dough evenly into the bottom and sides of a 10½-inch tart pan. Run a knife over the perimeter of the pan to trim any overhanging dough, then cover with plastic wrap and refrigerate until firm, at least 30 minutes.
  3. Position a rack in the center of the oven and preheat to 400°F. Bake until the crust is lightly golden and risen slightly, 12–15 minutes. Set aside.
  4. Meanwhile, in a large bowl, toss the blueberries with the cornstarch, lemon zest, and remaining sugar. Using a fork, lightly mash about an eighth of the berries. Scrape into the baked crust, using a silicone spatula or spoon to flatten the top, then bake until the blueberries are bubbling, about 25 minutes. Set aside to cool to room temperature.
  5. To a small pot set over medium-low heat, add the jelly (if using) and cook until it’s pourable, 3–5 minutes. Using a pastry brush, paint the top of the tart with the jelly. Refrigerate for at least 15 minutes, then serve with whipped cream or ice cream if desired.

Baking a single oversize biscuit instead of laboring over individual ones makes for a marvelously over-the-top presentation of the classic American dessert. Because this strawberry shortcake recipe hinges on peak-season berries, it’s best to hit up your local farm stand for Tristar and other heirloom strawberries (alternatively, fancy-schmancy Oishii berries are sweet year round). The recipe can be doubled with success; simply make two biscuits, not one extra-large one.

Time: 1 hour 10 minutes
  • 3 cups strawberries, washed, hulled, and halved lengthwise
  • ¼ cup plus 2 Tbsp. sugar, divided
  • 1½ cups all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. fine salt
  • 6 Tbsp. unsalted butter, cubed, divided
  • ¾ cup whole or two percent milk
  • 1 cup cold heavy cream
  • 3 Tbsp. confectioners sugar
  • 1 tsp. vanilla extract

Instructions

  1. In a bowl, toss the strawberries with 5 tablespoons of the sugar and set aside to macerate for 30 minutes.
  2. Position a rack in the center of the oven and preheat to 400°F. Into a large bowl, sift the flour, baking powder, salt, and remaining sugar and whisk gently to combine. Scatter 4 tablespoons of the butter on top, then use a pastry blender or your fingers to work it into the flour mixture until it looks like coarse crumbs. Stir in the milk. Turn the dough out onto a floured surface, then shape it into a large biscuit 6 inches in diameter and 1 inch thick. Transfer to a parchment-lined baking sheet.
  3. Bake until just golden, about 25 minutes. When cool enough to handle, use a sharp knife to slice it horizontally in half, then transfer to a platter and spread the cut sides evenly with the remaining butter.
  4. Using a handheld or stand mixer on high speed, whip the cream until soft peaks form. With the mixer running, slowly add the confectioners sugar and vanilla, then continue to beat to nearly stiff peaks.
  5. Assemble the shortcake: Spoon the strawberries and their juices atop the bottom half of the biscuit, then cover with the whipped cream and top with the other half of the biscuit. Serve immediately in wedges.

Let me share something with you: I love bread. Baking (and then consuming) a homemade loaf is one of life’s most enjoyable simple pleasures. I admit that the process does require a bit of planning—and a few hours of downtime. And yet the results are incredibly rewarding and absolutely worth the effort. As someone who, years ago, became obsessed with baking bread and then went on to work in a professional bakery, I always advocate for home cooks to try their hand at making their own bread at home. Learning how to make a baguette is a simple and straightforward starting point.

Much like the simple roast chicken or sky-high soufflé, a perfectly executed baguette is considered one of the best marks by which to judge a master of culinary craft. French President Emmanuel Macron successfully advocated to include the slender loaves in UNESCO’s list of “Intangible Cultural Heritage”—a process that took six years to provide the necessary documentation! Amateur bakers tend to test the waters by making boules, bâtards, and pan loaves. A baguette, on the other hand, can seem a bit more intimidating. In reality, these loaves require only a handful of tools and ingredients that you likely already have in the kitchen, and are achievable for anyone with a hot oven and some time. Though your first attempt might not look exactly like those at your local bakery, learning how to make a baguette is all about practice (and enjoying the fresh-baked results).

What you need:

Tools:

  • 2 large mixing bowls or a stand mixer fitted with dough hook attachment
  • Digital Scale*
  • Whisk
  • Bench Scraper
  • Cast iron skillet 
  • Parchment paper
  • Baking Sheet 
  • Very sharp paring knife, razor blade, or bread lame

Ingredients:

  • 1½ cups (355 g) warm (not hot!) tap water (between 105°F-115°F)
  • 1½ tsp. (5 g) active dry yeast**
  • 3¼ cups (462 g) all-purpose flour***  
  • 1¾ tsp. (5 g) kosher salt
  • Neutral oil, such as canola, sunflower, or vegetable, for greasing
  • 2 cups boiling water (very hot tap water can also be used)

*I highly recommend investing in a digital scale for use in any home baking project. In a professional bakery, every ingredient is measured in grams. This is for a few main reasons: Multiples of 10 are incredibly easy to scale up and down as needed, and gram measurements are more precise than pounds and ounces and more accurate than cups and tablespoons. 

**Bread flour can also be used in this method, although its higher protein content will make for a “stronger” dough, with more elasticity when proofing and shaping.

***You are also welcome to substitute instant dry yeast for active dry yeast, just be aware that the fermentation time when using the instant version will be slightly faster. This will speed up fermentation and proofing times by about 15 minutes at each stage. I prefer to use active dry yeast in this recipe because a slower fermentation time results in a more flavorful final product.

BEFORE YOU BEGIN

Traditional baguettes are made using a type of preferment called a poolish. This mixture of yeast, flour, and water is mixed a few hours ahead of time, then added to the final dough to increase its “extensibility” (in other words, stretchiness, which makes shaping easier). It also lends the finished product a more complex and yeasty flavor than breads made with “straight doughs” mixed without preferments. The loaves are also often cold-proofed for several hours (and even overnight) to increase flavor depth as well. The method in this streamlined tutorial skips those steps, and instead shortens the entire process to about four hours. If you want to get a head start (and a more pronounced flavor), cover the shaped loaves with a tea towel and proof overnight in the fridge before scoring and baking them, as described below, the following morning. 

STEP 1: Mix and knead the dough.

In a large bowl, whisk together the water and active dry yeast, then set aside at room temperature until slightly foamy, about 10 minutes. (If the yeast does not begin to foam at the surface, it’s probably past its prime. Discard it and grab some fresh yeast before continuing.) Add the flour, then, using a fork or your hand, stir until all the flour is absorbed and there are no dry pockets. Set aside to allow the flour to hydrate for 20 minutes.*

Lightly flour a clean work surface. Sprinkle the salt over the dough, then transfer to the surface and knead until all the salt is incorporated and the dough is elastic and mostly smooth, 9–12 minutes. (If using a stand mixer, mix the dough on medium-low speed for 4–5 minutes.) Form the dough into a ball. Lightly grease a clean, large bowl, transfer the dough into it, cover, and set aside until the dough has nearly doubled in size, about 45 minutes. Note: The warmer and more humid the environment in your kitchen, the faster your dough will rise. During the colder months, one of my favorite techniques is to ferment the dough right in my oven with the pilot light on, or near a warm radiator. 

Letting the dough hydrate and rest before adding the salt is a process known as autolyse. This process allows gluten bonds to start forming gently—before you start working the dough—reducing kneading time and resulting in a more irregular, open crumb structure.

STEP 2: Stretch and fold the dough.

Imagine your dough ball as having four corners. Grab the top two corners (furthest from you) and lift them up and away from the sides of the bowl, folding them over towards you. Rotate the bowl 180 degrees and repeat. Now do the same with the right and left sides, respectively. Your dough should now resemble a folded envelope. Carefully remove the “envelope” from the bowl and invert it, placing it back in the bowl, seam side down. Cover the bowl with plastic wrap and return to a warm area until doubled in size again, another 45 minutes to an hour. 

You may be used to seeing bread recipes that instruct you to “punch down” the dough (in other words, deflate the dough of any gasses formed during the fermentation process). I don’t like to do that here, because removing these gasses can lead to a denser loaf. Instead, this folding process helps to both redistribute the entrapped gasses and ensure a more even temperature throughout the dough.

STEP 3: Cut the dough into three pieces.

Carefully transfer the dough to your lightly floured surface, once again taking care to not deflate it excessively. Place a large cast iron pan on the floor of your oven, adjust the oven rack to the center position, and  preheat to 450ºF. Using a bench scraper or sharp knife, divide the dough into three equal pieces (extra credit here if you have a kitchen scale!). Roll each piece into a tight oval (the dough should be springy if you poke it with your finger). Cover the ovals with plastic wrap or a tea towel and set aside at room temperature until the dough is “relaxed,” 15–20 minutes.

STEP 4: Shape and final proof the baguettes

Line a large baking sheet with parchment paper, dust lightly with flour, and set aside. On your lightly floured work surface, lightly press and stretch one of the dough pieces into a rectangle. Pick up the top two corners and fold them towards you, stopping halfway. Repeat with the bottom corners (away from your body this time). The dough should now resemble a tube, with a seam running along the center. Place the tube seam-side-down, and repeat the process with the other two dough pieces. 

Then, go back to the first tube: Position your hands at the center, then carefully roll the log of dough back and forth, applying pressure toward either end and elongating the dough as you go. Repeat this process a couple of times until the loaf is about 16 inches long, and tapered at the ends. Continue with the other two pieces of dough, then place the baguettes seam-side-down on the lined baking sheet. Cover with a sheet of plastic wrap or very slightly damp tea towel and set aside at room temperature until the loaves are slightly puffed up and the dough bounces back slightly when poked gently with your finger, 20–30 minutes.

STEP 5: Score and bake the baguettes.

After scoring your baguettes, you’ll want to move as quickly as possible when loading them into the oven, so be sure that it’s fully preheated before you proceed. 

Using a sharp knife or razor blade held at a 30 degree angle, cut four evenly spaced slashes along the top surface of each baguette. If you have a spray bottle on hand, give the loaves a light spritz of water, then, quickly and carefully transfer the baking sheet to the oven, pour at least 2 cups of boiling water into the hot cast iron skillet, and shut the oven door. Bake the loaves until golden brown, 25–30 minutes. Remove the baguettes from the oven and do your best to let them cool before diving in. 

A steamy oven is crucial for achieving a good rise and a thin and crispy crust. The steam created from the initial heat of the skillet will fill the oven, then condense and settle over the surface of the baking loaves. That moisture keeps the outside of the dough hydrated and springy, allowing for more “oven spring” as the loaves bake. Without steam, the outer layer of bread “crisps up” before the internal temperature has risen enough to cause the gasses to expand, and your bread can end up dense, hard, and misshapen.

Tip: Most home ovens have vents that let out steam, usually above and behind the cooktop. In order to retain as much steam as possible, I recommend using a rolled up kitchen towel to block these vents while you bake—every little bit of steam helps!

How to store leftover baguettes

Baguettes tend to go stale within a day or two, and leftovers are best kept at room temperature in a bread box or a waxed canvas or plastic bag. Fully cooled bread can also be wrapped tightly in plastic and stored in the freezer for several weeks. And should you find yourself with some stale leftovers, don’t throw them out. I like to cube stale bread, toast in a 375°F oven until golden-brown, then toss them in some olive oil and savory seasonings to make croutons. Or, simply pop the cubes in the food processor and blitz them down into homemade breadcrumbs.
